Quick Chickpea Curry

Ingredients

1 tablespoon oil

1 onion, chopped

2 cloves garlic, crushed

1 tablespoon curry powder

1 tin chopped tomatoes

1 tin chickpeas (drained)

100ml coconut milk

Salt and pepper to taste

Method

  1. Heat the oil in a pan and cook the onion until soft.
  2. Add the garlic and curry powder and cook for one minute.
  3. Stir in the chopped tomatoes and chickpeas.
  4. Add coconut milk and simmer for around 10 minutes.
  5. Season to taste and serve with rice or naan bread.
